Goof Proof Chocolate Crepes

Goof proof - AKA tried and tested fail proof -chocolate crepes that you can whip up in a hurry. These any day treats boast a low 250 kcal and are packing 24 g of protein per serving. Roll, fold or stack high and top up with your favourite fillings, fruits, and a little sprinkle of your favourite indulgences - a square of chocolate goes a long way when you grate it!
Preparation Time - 5 minutes
Cooking Time - 10 minutes
Servings -  1 makes 4  - 5 crepes


Ingredients

  • 50g oats
  • 10g cocoa powder or raw cacao powder
  • 125ml egg whites
  • 60ml unsweetened milk of choice (I used almond)
  • 1 tsp. vanilla extract

Directions
  1. Whisk together all ingredients in a jug until smooth.
  2. Set to one side while you preheat a large non stick pan. Once hot, grease with a low-calorie oil spray.
  3. Pour ⅓ cup (80ml) batter into the pan, swirl immediately and allow to cook over a medium heat until the sides lift (approx. 2 minutes).
  4. Flip using a spatula and cook for just 20 -30 seconds more.
  5. Transfer to a plate and repeat. Batter makes approx. 4-5 crepes.
  6. Crepes can be rolled, stacked or folded. I topped mine with dairy free yogurt, some slices of orange, a square of dark chocolate chopped shavings, and a little crunchy almond seeded chia granola.
